Full soft on the rear extension with a ladder bar setup could make for quite an exciting/violent initial hit if your engine combo has a decent amount of "grunt" to work with. I would just put both the extension & compression valving somewhere at/around 50% of their adjustment range & then work the valving from there during testing.
There is a couple of different ways to set rear shock centrer-to-center height vs car ride height. Some guys go with whatever the shock maker suggests (for example a 16" shock set at/around the 13.5 to 14 C/C range). And some do like Jon mentioned and just set the shock's C/C height at/around half the shock's total travel.
Either method usually works OK in most cases. What your trying to avoid is setting the rear shock C/C height so that it can either top-out or bottom-out the shock during any part of the suspension travel during the pass, (which can upset/unload the chassis).

if you dont have room for tires,like when you drop the rear to get them off,you'll have issues with them set too soft.
