What sensor on iron scj intake?

What would you measure from, what it looks like, manifold heat passage? This is red stock appearing -71 scj Mustang from the Hemmings article.

I'm not sure what that sensor is for but on an original SCJ there is a plate that bolts to the exhaust crossover that has a coil of tubing that slips into the manifold and the other end of the tube goes to the choke housing. If I'm not mistaken it screws to the threaded part right that you can see just behind the choke housing. That's the best I can remember from when I had mine back in the 70's. Most guys just used the gasket to make a block off plate and eliminated it.

You can see the fitting on the side of the carb were the the choke tube is supposed to go. Have no idea what that sensor would be for.

Kind of odd to read the temp at the exhaust cross over isn't it?? How close is it to actual exhaust temps?? Just wondering what it could be used for.
