We're always there in the winter time so don't know what's going on in the off season but every little brewery we hit was pretty damn good. It's a neat little town up there. Gets pretty chilly still this time of year so I'm sure you'll want some warm clothes, especially if you're out and about at night. Safe travels brother!!

Been to Breck a few times. I am one of those that doesnt do well at elevation. Altitude sickness is no joke so watch for the signs and drink plenty of water and gatoraide. Take motrin to hold off brain swelling. I prefer lower elevation places where I can sleep better.
Down the road towards I-70 is the Silverthorne Dillan area that is 1500 ft lower and has two of my favorite places to eat. The Damn Brewery and the Mint. Try them out and let me know if you like them.
I cant imagine being there and not skiing I would be sick just looking at the mountains. If you want some excitement go to Beaver Creek (next to Vail) and rent a mountain bike to run down a few of their green runs. I hear people have a blast doing that when there's no snow.
Oh and if you need a serious hit of pure O2 there's store in Breck that sells it by the half hour.
