Why is he staging the bike so far to one side/outside the groove where there is zero rubber down?

Yes the HDs are Bad ass.. I grew up on them. race flat track & drag race them also.
But this is not HD but its one Bad ass bike.

No doubt, nitro bike racers are another breed altogether, 200 mph+ on one wheel with a bomb under you/between your legs, those bikes and their riders are no joke
