Some Christmas Cookin Empty Some Christmas Cookin

Well the truck is tucked away for the winter and I had some time off so I thought I try some cooking during the holidays, this will get your arteries to harden:

Manloaf:

Some Christmas Cookin Manloaf

1 Tbsp. (15mL) vegetable oil
1/2 cup (125mL) finely chopped onion
1 cup (250mL) finely chopped mushrooms
2 cloves garlic, minced
3/4 lb. (375mL) EACH ground pork, veal and lamb
1/2 cup (125mL) ketchup
1 Tbsp. (15mL) Dijon mustard
2 tsp. (10mL) Worcestershire sauce
3/4 cup (175mL) fresh breadcrumbs
1 egg, lightly beaten
1 tsp. (5mL) EACH salt and pepper
1/4 cup (50mL) finely chopped flat leaf parsley
I pkg. bacon slices

Preheat oven to 350F (180C)

In a medium skillet, heat oil over medium high heat. Add onion and cook until soft, about 5 minutes.
Stir in mushrooms and cook until golden and liquid has been absorbed, about 5 minutes.
Add garlic and cook 1 minute. Set aside to cool.

In a large mixing bowl, combine pork, veal, lamb, ketchup, Dijon, Worcestershire, bread crumbs, egg, salt & pepper and parsley.
Mix just to combine, do not overwork or meatloaf will be too dense.

On a foil-lined baking sheet (not a loaf pan), lay bacon strips end to end the length of the loaf.
On top of bacon shape meat mixture into a large loaf.
Wrap loaf horizontally with strips of bacon.

Bake in the centre of oven until cooked through, about 50 to 60 minutes (a thermometer should read 160F).
Remove from oven and let rest 10 minutes before serving.

Serves 6-8. (more) Smile

Do the onions, mushroom and garlic get mixed in the loaf, or layered under the bacon?

This looks like a meal fit for starting off the new year!

After you get the onions starting to brown then add the garlic and mushrooms, once done put them in a bowl and when you have all the other ingredients mixed fold in the cooled down bowl. You'll notice if your mixing it to much. I just lay the bacon out on a pan with two pieces just overlaying and the next section just overlapping. Form the meatloaf into a shape to fit the pan and bring the bacon over. It will hold on by itself without any toothpics. Don't use a loaf pan as it cooks the outer layer faster then the inside.

Damn, all this time on the forum and this is the most knowledge I've had on a topic Laughing
