How much should be milled off of the stud pedestals for guide plate installation on C8VE heads. I assume the same amount as the thickness of the guide?

Actually, a bit more.
At LEAST the thickness of the guideplates but, Ford recomends .230" to get the pushrods near correct alignment if you use a flat Ford guideplate.
