Oil pressure at the stripe
I made note of a few things this weekend seeing as how this was it for 2013. My oil pressure at the stripe at around 6250rpm was about 45-50psi. As soon as I pile the brakes on it raises to 75lbs and it stays there as I drive up the return road unless I push harder on the throttle and then it starts to drop back some closer to 50psi...I'm running a Melling HV pump with conventional 10w30 oil, FRPP fox body swap pan and a FL1A filter. I have a 6an line from the front oil gallery port about the filter to the rear oil gallery port. Am I sucking the pan dry or is it something else? I only run about 2500rpm in 2nd gear on the return road. I cut the filter open after every race and all summer it has been good, nothing scary...LOL
I'm having the engine balanced this winter and putting in forged pistons at the same time. Just figured if there is an oiling issue now would be the time to deal with it.

check how close the pickup is to the oil pan.

I remember checking it when I assembled the engine, I can't remember exactly the distance but I want to say it was 3/8" from the pan. Its a good point though, I can check it when I pull the engine out in a couple months. Cold pressure is 85psi at idle.

Any baffling in the pan? As I recall that pan stock has none. Sounds like the oil is sloshing away from the pickup. How much oil is in the pan? Supposed to be 6 quarts. You can add an extra quart of oil and see if it helps as a test. I'd add a baffle at the back of the pan.

Mine did something similiar on tge dyno. Add another quart of oil

I think I have 6qts in there with a bottle of additive as well....I guess I'll have to wait until spring to try that...LOL
