Re: OIL PRESSURE
Going to depend on build, and oil used.
Old rule of thumb used to be 10lbs oil pressure for every 1000 RPM you want to run, typical engine would idle about 30 psi, and then ensure you had 60 psi for 6k, 70, for 7k etc.
Most melling design pumps are supplied with a 60 psi relief spring for normal, and an 80 psi relief for the "high pressure" rated pumps. A couple washers work as a nice spring shim to move the number up or down, depending on needs.
Have to read the paperwork with your Kaase pump to see what the relief is rated at.
Modern engine building has found pressure less an issue, and has focused on pump volume for engine needs, NASCAR and the such, no issue with 3 to 5lbs per 1000 RPM. But they are also different types of pumps, dry sump systems, etc............

Re: OIL PRESSURE
I don't think your number sound high. I have the melling hv pump and I see hot pressures of around 35 idle and 70-75 in hammer mode. Cold start pressure is right at 80-85psi. Open header?!? Put some mufflers on that thing ya hillbilly!
I actually have mine open header right now while I fab up the new exhaust. Sounds hella sweet but all my neighbors hate me lol.

Re: OIL PRESSURE
Those pressures are about right . My Kaase pump runs around 80-83 cold 55-60 hot idle and around 73 on a dyno pull with a 20/50 oil
