is there a way to measure or check to find how much head was milled

Kinda ... measure the width on the intake side from the valve cover rail to the deck surface; (however, that won't tell you if it was angle milled). The bolt column measurement on the exhaust side, (from machined bolt seat surface to machined deck surface), CAN be an indication. The bolt seating could have been spot-faced though.
