You can make all kinds of arguments to support your position that aluminum is better.
Aluminum certainly does have better properties.
Does that mean one can't make 500 hp economically with iron?
The Eddy aluminum would be my last choice for an aluminum head.
I've messed with plenty of iron heads.... Yes they can make decent power...... But they are freaking heavy and a PITA to port!
Face it, this guy is the same as the rest of us.... He will want more later!
The Eddys may not be your choice, but they work just fine if you want a stock valve location aluminum head. Just cause they aren't pushed doesn't mean they are junk.

The Eddy heads out of the box can also make 500 HP. The standard Eddy valves, springs, retainers etc. are certainly not race quality parts - however, would "do" for a street type engine.
New low cost valves, springs and retainers for the iron heads will not break the bank either.
If the OP was asking for 700 HP, then I would suggest an aluminum offering. In any case the factory EDDY's would require a complete upgrade of valves, springs and retainers anyhow.
Iron CJ heads have made north of 800 HP also!
Lets not turn this forum into a pissing match - like the old FE forum becomes (alot these days).

Just my opinion, but if you are going to spend some money why not get something that would allow you to grow in the future? How long with 500hp be enough? The weight savings, and having all new parts, all pluses for Edelbrock heads.
Unless I missed it, the OP made no mention of being on a tight budget. My Eddies flow over 400cfm, They should keep a smile on my face for a while.

This thread reminds me of one thing I have noticed about this forum. It seems people tend to automatically assume that they know what everyone else ought to have! What if the man has a line on a set of used edlebrock heads for a smoking deal? It's not like he mentioned his budget or even that he had a budget.
Let's get back to our roots and start giving people information and letting them decide rather than telling them what they ought to do! Share what you know. Tell him exactly what it would take to make a solid 500hp with D0ves.
